Baking is one of my absolute favorite things to do and nothing beats a homemade cookie for my Monday 10 o’clock coffee. So here we go, I will start sharing my best recipes here. This shortbread cookie is called ”Finnish Sticks” and gets a little extra from bitter almond and a crunchy topping. As you can see in my instructions I took some shortcuts and it works. Just bake!
DOUGH
*60 gr of blanched and ground almonds (or almond flour)
*1 ml bitter almond oil (or 3 whole bitter almonds)
*120 gr of flour
*45 gr sugar
*100 gr butter
*Pinch of salt
TOPPING
*30 gr chopped almonds (blanched if you like)
*1 egg white
*2 tbsp pearl sugar
Set the oven for 350°. Mix the almonds (or almond oil), flour, sugar and a pinch of salt. Add the butter in pieces and work to a dough. Let rest for 30 min in the fridge.
Split the dough in 4 pieces and make 12” rolls. Add the rolls to a tray with parchment paper. Whisk the egg white and cover the rolls. Sprinkle the rolls with pearl sugar and almond mix. Cut the rolls into 1.5” cookies and put it in the oven for 12 min. Let cool on a rack.
(I didn’t have almonds for the dough and I didn’t let the dough rest. This recipe works fine anyway.) If a dough doesn’t ”come together” try to add a tsp of water at a time until it does.
