Here is another favorite of mine, a gluten-free brownie. I served it at my daughter’s soccer game and it was a success among kids and adults. It's so easy to make, 10 min and it's in the oven!
*200 g butter (use non-dairy for a vegan version)
*270 gr sugar
*60 gr unsweetened cocoa
*1 tsp salt
*1/2 tbsp vanilla essence
*55 gr gluten free flour mix
Heat the oven to 350F and line an 8x8” tray with parchment paper.
Melt the butter in a saucepan. Add sugar, cocoa, salt and vanilla. Mix 1 egg at a time into the mixture and finally add the flour and whisk to a smooth batter. Spread batter in the tray and bake for 20-22 min. Let cool completely in the fridge, cut and serve as is or sprinkle some powdered sugar on top.
Don’t be tempted to overcook, this will be perfectly gooey inside!
